On The Menu: August 10th – August 16

On The Menu August 10th – August 16th 2009

Monday August 10th – Fritatta
Frittata is an Italian dish, it means “fried” and is an egg dish which carries a lot of resemblance to the Spanish tortilla. The main difference between the two is that a tortilla is usually prepared in the pan only, whereas a frittata is often finished off by baking it in the oven. Our Fritatta has savory artichoke, cheese, and flavorful ham.

Tuesday August 11th – Chicken Salad
This end of summer favorite is savory and moist with morsels of chicken swathed in garlic mayonnaise with and just enough vegetables to add some texture. Delicious! Wednesday

August 12th – Ham Salad
The word ham comes from the Old English hamm, but its American cousins salt pork and bacon made ham an easy mainstay in American kitchens by the 1920’s. The classic flavor of cured and smoked ham reached high art in rural sections of Virginia, Georgia, Tennessee, Kentucky, Vermont and other nearby states, where ham salad is still very popular today. St. Anthony’s ham salad is rich in flavor, protein, and vitamins, and is made of chopped ham with fresh veggies.

Thursday August 13th – Burritos
According to the Encyclopedia of American Food and Drink , burritos (“little donkey” in Spanish) are a Mexican-American invention that first saw print in America in 1934. They were popularized in Los Angeles at the famed El Cholo Spanish Cafe during the 1930s, and today are a universal food made of a tortilla filled with a variety of condiments and then rolled and cooked on a griddle. St. Anthony’s burritos are a special treat and are filled with rice, beans, chicken, and cheese. Que Rico!

Friday August 14th – Saigon Beef
Although the lion pillars on Larkin and Eddy announces the gates to Little Saigon in the TL, at Jones and Golden Gate our own Chef Lien brings a little Saigon to St. Anthony’s, with her version of Saigon beef with tender beef flavored with ginger, garlic, onions, and vegetables. And Lien’s rice is perfect, every time.

Saturday August 15th – Chicken Marengo
Chicken Marengo is an Italian savory dish, so named for being the dish that Napoléon Bonaparte ate after the Battle of Marengo. According to legend, Napoleon demanded a quick meal after the battle and his chef was forced to work with the meager results of a forage: a chicken and some eggs, tomatoes, onions, garlic, herbs, and olive oil.

Sunday August 16th – Biscuits and Country
Gravy Biscuits and gravy is another Southern classic that grew out of necessity and availability. Home chefs made use of the affordable and popular pork sausage for everything it offered. The fat from cooked sausage was turned into a white gravy, using flour, milk and water, and buttermilk biscuits were cooked and served with the gravy for a filling and tasty meal. St. Anthony’s version is tasty and hearty, and is served with ground pork sausage.
